Serves 6
Ingredients
- 3 tablespoons olive oil
- ½ cup chopped onion
- 1 clove garlic, minced
- 1-½ pounds green beans, cut into 2-inch pieces
- ½ cup water
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon freshly ground pepper
- 4 tablespoons freshly grated Parmesan cheese, divided use
- 2 tablespoons chopped oil-packed sun-dried tomatoes, drained (optional)
Directions
1. Heat olive oil in a large skillet over medium high heat. Add the onion and garlic and cook, until tender, about 5 minutes. Add the green beans, water, basil, salt, and pepper. Cook, covered, over medium heat until beans are tender, about 10 minutes. (The cooking time will vary according to the size of the beans.)
2. Drain off any remaining liquid and stir 2 tablespoons cheese and optional sun-dried tomatoes into the beans. Spoon into a serving dish and sprinkle with remaining cheese.
