Ingredients

  • 1/2 cup mild olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon dried oregano
  • 3 large garlic cloves, finely chopped
  • Salt and freshly ground pepper
  • 4 large tomatoes, sliced
  • 1 red onion, halved, thinly sliced
  • 1 English cucumber, sliced
  • 1 cup Feta cheese, crumbled
  • 1/3 cup Kalamata olives, pitted and chopped

Instructions

Whisk oil, vinegar, parsley, oregano, and garlic in a small bowl. Season to taste with salt and pepper. Place tomatoes, onions, and cucumber on a platter. Pour dressing over salad. Let marinate for at least 20 minutes. Sprinkle salad with cheese and Kalamata olives.
