Recipe

Serves 6 to 8
Ingredients
- Butter, for baking dish
- 4 cups milk
- 1½ cups quick cooking grits
- ¼ pound plus 4 tablespoons unsalted butter
- 1½ teaspoons salt
- Dash of hot pepper sauce
- 1½ cups grated cheddar or rat cheese
- 3 eggs, well-beaten
- Butter, for frying
Equipment:
- Large rectangular ovenproof baking dish
Directions
Butter the baking dish, set aside. Preheat the oven to 350°.
In a large saucepan, bring the milk and 2 cups water to a boil over high heat. Pour in the grits, stirring constantly until moistened. Remove from the heat and stir in the butter, seasonings, cheese and eggs. Pour into the prepared baking dish and bake for 1 hour.
Let cool to room temperature and cut into diamond shapes.
Pan fry in butter until golden on both sides.
Notes
These grits can be served hot, direct from the oven, or made in advance and fried just before serving.
