Each Wednesday from May to late November, my sons and I pick up our box of vegetables from the drop-off site for Spiral Path Farms, our CSA. While I drive, the boys take turns reading the information sheet that includes the list of the contents, notes from the farm, and delicious recipes featuring the enclosed produce. After hearing the boys’ enthusiasm as one read the Carrot and Raisin Salad recipe aloud, we stopped at the grocery store for the honey and had the salad with dinner that night. Good produce can make children ask for vegetables. Parents will enjoy the salad, too!
Combine the honey, mayonnaise and lemon juice in a bowl and whisk until smooth.
Combine the carrots, raisins and sunflower seeds in a bowl and mix well. Add the honey mixture and mix well. Chill in the refrigerator for 1 hour. Stir before serving.
