For those who like an added crunch on their salad, make these nuts ahead of time to sprinkle on Grilled Chicken Mandarin Salad or another one of your favorite salads.
1. In a small frying pan, cook almonds and sugar over medium heat, stirring constantly, until sugar is melted and almonds are coated and lightly browned. Set aside to cool then separate. Store in an airtight container for up to 3 months.
Variation: Substitute pecan halves, pine nuts or a mixture of nuts for the almonds.
Remember, melted sugar is hotter than deep fat. Remove the pan from the heat just as the sugar melts and begins to darken, as it burns very easily.
Double the recipe so there is lots to nibble on while enjoying a glass of wine.
