Most grown-ups, too, would be ecstatic to be given Ritzy Chicken Nuggets for supper or lunch. When I eat them, this is the salad I make to go with.
For the salad:
- 4 little butter lettuces
- 2 large gherkins to give approx. 7 tablespoons diced
- 1-2 tablespoons capers
- 2-3 tablespoons chopped parsley
For the dressing:
- 2 teaspoons gherkin brine
- 2 tablespoons olive oil
- ½ teaspoon Dijon mustard
and eat 2 nuggets each or make more
Slice the lettuce into ½ inch slices across the lettuce and put into a bowl. Dice the gherkins and add to the lettuce with the capers.
Combine the dressing ingredients, whisking together, and then pour over the salad, tossing it to mix. Arrange on a couple of plates and sprinkle over the parsley. And then just bring on the nuggets.
