Recipe

Almendras de Alcalá

Visitors come to Alcalá de Henares to see the sensational Plateresque architecture of its old university, but few will leave without passing through one of the city’ s many candy shops to purchase these celebrated sugar-coated almonds.

Ingredients

  • 1 cup almonds with skins
  • 1 cup sugar
  • 1 cup water
  • ¼ teaspoon cinnamon

Directions

Line a cookie sheet with a greased piece of foil. In a skillet, mix together all ingredients and boil over a high flame, stirring constantly, until the sugar crystallizes.

Spread the mixture on the cookie tray, separating it into individual sugar-coated almonds. Cool.
