Broiled Chicken with Honey and Lemon

This chicken dish is easy to prepare, well seasoned and simply delicious.  It can be served either hot or at room temperature.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons low-sodium soy sauce
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • Freshly ground black pepper   
  • 4 medium, single, skinless, boneless chicken breasts

Instructions

In a small bowl, combine all the marinade ingredients. Place the chicken in a medium bowl and coat with the marinade. Cover with plastic and refrigerate for 2 to 3 hours.

Before broiling, bring the chicken back to room temperature. Place an oven rack 6-7 inches from the heat source and preheat the broiler. Line the rack of a broiler pan with heavy duty foil.

Place the chicken on the broiler pan and spoon marinade over the chicken.

Broil for 5 minutes on each side, until the chicken is slightly pink on the inside. Remove from the broiler, cover with the existing foil and let rest for one minute. The chicken will continue cooking.
