- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/8 teaspoon ground mace
- Freshly milled white pepper
- 1 cup day-old white bread, crusts removed, and bread torn into small pieces (about 3 slices)
- ½ cup country cured ham, cut into julienne (about 3 ounces)
In a small saucepan, melt the butter. Remove from the heat and whisk in the flour.
Return to the heat, add the milk, mace, and pepper to taste and whisk constantly until the sauce thickens and is velvety-smooth.
Fold in the bread and ham, and pour into a heated sauceboat.
