Whenever it’s berry-picking time in your home town—or at least when the berries hit the market in abundance—set some aside for this refreshing icy granité.
1. Place the berries in a shallow bowl and cover with the sugar. Set aside to form a syrup, about 1 hour.
2. Once the syrup has formed, place a sieve over a medium-size bowl and pour the berries and syrup through, pressing with a wooden spoon to extract all the juice and syrup.
3. Add the extract and the water and mix. Pour into a freezer container and freeze until a light frosting appears, about 2 hours.
4. Spoon into small glasses, garnished with strawberry slices or whole raspberries.
Summer fruits make refreshing “granités,” a favorite drink in France that was adopted from the Italian “graniti.” The granité resembles snow-frosted water. It must always be liquid enough to be poured into a glass.
