applesauce-nut-bread

Yield : One 8½ × 4½ × 2½-inch loaf

Ingredients

  • ½ cup shortening
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups white flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup applesauce, preferably chunky
  • ¾ cup chopped walnuts

Directions

Preheat the oven to 350°F. Butter or grease a loaf pan. In a large mixing bowl, cream together the shortening and sugar. Add the eggs and vanilla to the sugar mixture and mix well. Sift together the flour, salt, baking powder, baking soda, cinnamon, and nutmeg and add to the egg and sugar mixture. Stir well to blend. Stir the applesauce and walnuts into the batter. Spread the batter into the greased loaf pan and bake for 50-55 minutes. Remove from the pan and cool on a rack.

Notes

Serve this wonderful spicy-apple bread with butter or honey.
