A perfect standby, good for any time you want an intense spicy flavor boost. To make it a hot curry powder, add one-half teaspoon or more ground cayenne.

Yield : Makes about ½ cup
Cooking Time : 10 minutes

Ingredients

  • 1 teaspoon black peppercorns
  • 3 tablespoons cumin seeds
  • 4 tablespoons coriander seeds
  • 1 tablespoon ground ginger
  • 2 tablespoons ground turmeric

Directions

Toast and grind the first three spices. Mix them with the ginger and turmeric. Store in a tightly sealed jar for several months.
